8 Red mullet fillets (each 100 grams)
8 Cherry tomatoes
500 grams little green Bell pepper
1 shallot
1 garlic clove
1 Tbsp butter
1 Tbsp Tomato paste
½ tsp sugar
salt
freshly ground peppers
2 Tbsps Lime juice
2 Tbsps Corn oil
Lime wedge (for garnish)

Preparation steps

1.

Rinse tomatoes and cut into quarters. Rinse, halve and seed the bell peppers.

Peel shallot and garlic and chop finely.

3.

Heat butter in a pan, sauté shallot and garlic and stir in tomato paste, sugar and freshly ground pepper to taste. Simmer about 7 minutes over low heat, then add the tomatoes and simmer until heated through. Season again with salt and pepper.

4.

Season the red mullet fillets with salt and pepper and drizzle with lime juice, then sear in a pan in corn oil for about 1 minute on each side.

5.

Distribute vegetables on warmed plates, top with red mullet fillets and serve with lime wedges.
