Red Mullet with Lemon Sauce
Ingredients
- For the red mullet
- 4 Red mullet fillets (ready to cook, about 200 grams)
- salt
- freshly ground pepper
- Pastry flour (to coat)
- 200 milliliters olive oil
- 1 organic lemon (for serving)
Preparation steps
For the lemon sauce, halve and squeeze out the juice from the lemons and orange. Peel the shallot and chop very finely. Heat 1 tablespoon butter in a pan and saute the shallot in it. Sprinkle with curry powder, sugar and let caramelize slightly. Pour in the lemon and orange juice and the vegetable broth. Season with salt and pepper, Puree the sauce with an immersion blender and stir in the rest of the butter.
For the red mullet, rinse the lemon and cut into slices. Rinse the red mullet, pat dry and season with salt and pepper.
Heat the olive oil in a large pan over high heat. Coat the red mullet in flour and fry in hot oil on each side for 3-5 minutes.
Arrange the fried red mullet in plates over the lemon sauce, garnish with lemon slices and serve immediately.
