250 milliliters Red wine
1 Tbsp butter
1 Tbsp balsamic vinegar

60 grams Blue cheese

Preparation steps

Rinse the endive, and remove the hard stalk. Cut into 2 cm (approximately 3/4 inch) wide pieces. Sauté in the olive oil 2-3 minutes, until lightly browned. Sprinkle with the sugar, lightly caramelize, and deglaze with the red wine. Simmer for 5 minutes, then remove from the heat and stir in the cold butter. Season to taste with salt, pepper, and the vinegar.

Divide into bowls, and top with the crumbled blue cheese.
