1 generous pinch grated Lemon peel

Preparation steps

1.

Cook the pasta in boiling salted water according to the package directions until al dente. Remove and drain. Rinse and thinly slice the zucchini.

Peel and finely chop the garlic. Sauté the zucchini and garlic in the olive oil. Add the lemon and shrimp, and cook for 2-3 minutes. Season to taste with salt and pepper, and stir in the lemon zest.

3.

Mix in the drained pasta, and cook briefly until the pasta is cooked through. Divide onto warmed plates, and garnish with shaved parmesan cheese.
