Beef with Rotini and Green Salad
Ingredients
- For the salad
- 1 small Lettuce
- ½ Lollo rossa
- 3 Tbsps White vinegar
- salt
- 6 Tbsps vegetable oil
- salt

- For the beef and rotini
- 500 grams Beef
- 1 small onion
- 2 vegetable oil
- 1 sm can Tomatoes
- 1 Red chili pepper
- 1 green chili pepper
- 1 yellow Bell pepper
- 400 grams green Spiral pasta
- 400 grams yellow Spiral pasta
Preparation steps
For the beef and rotini, cook the rotini according to package directions until al dente and drain. Rinse beef, pat dry and cut into strips. Peel onion and chop finely. Fry onion in oil in a pot, add beef and sear on all sides. Stir in canned tomatoes and chop the tomatoes into smaller pieces in the pot. Cut bell peppers in half, remove the seeds and finely dice. Halve chili peppers, remove the seeds and cut into thin half-rings. Add chili peppers to pot. Cover and let simmer for 10 minutes over low heat. Stir in rotini and simmer for 5 minutes.
For the salad, rinse the lettuce, trim and tear into small pieces. Mix vinegar with salt to taste and whisk in oil to make a dressing. Pour over lettuce. Serve beef and rotini with the salad, garnished with freshly ground pepper.
