150 grams Pastry flour
1 pinch salt
250 milliliters water
8 slices smoked Salmon
2 Oranges
1 Tbsp olive oil
freshly ground peppers
4 slices Salmon (cut into strips)
1 scallion (thinly sliced)

Preparation steps

1.

Mix the cornmeal, flour, salt and water together and knead to form a moist, soft dough. Cover and let rest for 15 minutes. 

2.

Divide the dough into 8 pieces and roll into thin circles with a rolling pin. Cook the tortillas in a hot, dry skillet for about 1 minute on each side, until dark brown in spots. Cover to keep warm. 

3.

Peel the oranges with a sharp knife and remove the segments. 

4.

Season the orange fillets with pepper and drizzle with olive oil. 

5.

Evenly divide the smoked salmon slices and orange fillets between 4 tortillas, top with the remaining tortillas and cut into wedges. Garnish with the salmon strips and sliced scallions.
