250 grams very fresh Salmon
1 shallot
1 pc Cucumber (about 100 g)
½ Lime
2 Tbsps grapeseed oil
Sea salt
peppers
4 stalks Dill

Preparation steps

1.

Rinse the salmon under cold water, pat dry, and cut into very small cubes.

Peel and mince the shallot. Peel the cucumber piece, halve lengthwise, and remove the seeds. Cut half of the cucumber into small cubes. Using a vegetable peeler, cut the rest into thin strips. Rinse half of a lime in hot water, pat dry, finely grate, and squeeze the juice.

Mix the salmon with the shallot, cucumber cubes, lime juice and zest, and the oil. Season with salt and pepper, and form into 4 balls. Place into 4 bowls.

Rinse and dry the dill. Garnish the tartare with the cucumber strips and the dill.
