1 Tbsp Tomato paste
3 Tbsps cream cheese
1 Tbsp lemon juice

150 grams Smoked salmon
4 hardboiled eggs
1 Red onion
1 small Organic cucumber
½ bunch Chives
9 slices tramezzino

Preparation steps

Whisk mayonnaise with tomato paste. Mix cream cheese with lemon juice and season with salt and pepper. Cut smoked salmon into thin slices. Peel eggs and cut into thin slices. Peel onion and dice finely. Rinse cucumber thoroughly and cut into thin slices.

Rinse chives, shake dry and cut into about 1 cm (approximatley 1/2 inch) long pieces. Layer sandwiches: spread 1 bread slice with a third of cream cheese and sprinkle with some onions. Top with one-sixth of smoked salmon and cover with a second bread slice. Spread with one-third of tomato mayonnaise, layer some eggs slices and some salmon on top.

Cover with third bread slice and press lightly. Prepare two more sandwiches in the same manner. Cut each sandwich into 4 strips (for a total of 12 strips) and top all with slightly overlapping cucumber slices. Sprinkle 8 sandwich strips with chives and remaining strips with onion. Arrange on plates (3 per plate) and serve.
