Ingredients
- For the skewers
- 750 grams Beef fillet
- 40 Wooden skewers (about 20 cm long)
- For the marinade
- 3 Tbsps soy sauce
- 3 Tbsps sweet soy sauce
- 1 tsp Sambal oelek
- For the peanut sauce
- 2 shallots
- 3 garlic cloves
- 200 grams toasted Shelled peanut
- 4 Tbsps sweet soy sauce
- 1 tsp Sambal oelek
- ½ lemon (juiced)
- 3 tsps Palm sugar
- 3 Tbsps Peanut oil
- As needed
- 3 Tbsps vegetable oil (for frying)
- 200 milliliters Coconut milk (unsweetened)
Preparation steps
For the skewers, rinse beef, pat dry and cut into about 1 cm (approximately 1/2 inch)cubes. On each skewer, stick 4 pieces of beef (beef should be close together, but not touching). Arrange skewers close to each other on a plate circularly. For the marinade, mix marinade ingredients together in a bowl and pour over beef skewers. Leave beef skewers to marinate for about 1 hour in the refrigerator. Turn skewers occasionally during marination time.
For the peanut sauce, peel shallots and garlic and finely chop. Puree or crush peanuts in a blender. Mix shallots in a bowl with peanuts, sweet soy sauce, sambal oelek, lemon juice and palm sugar into a paste. Heat oil in a small pan. Add peanut mixture to the pan and fry for 2-3 minutes over medium heat. Deglaze the pan with coconut milk. Reduce heat and simmer, while stirring constantly, for 2-3 minutes. If the sauce is too thick, add a little water. Preaheat the oven broiler. Cook beef skewers under the preheated oven broiler, watching carefully, for 2-3 minutes on each side. During the cooking time, brush beef skewers with remaining marinade. Instead of using the oven broiler, skewers can also be cooked in a skillet with 3 tablespoons oil over medium heat on each side for about 5 minutes. Serve skewers with peanut sauce.
