350 grams Brown lentil
400 grams Beef (Boiled meat)
2 carrots
200 grams Celery root
1 large onion
200 grams waxy potatoes
2 garlic cloves
½ bunch parsley
100 grams sliced Smoked bacon
3 Tbsps olive oil
2 liters Beef broth
salt
freshly ground peppers
cayenne pepper
1 bay leaf
2 Tbsps apple cider vinegar
4 Sausage (such as Hungarian sausage or Debrecziner)

Preparation steps

Soak lentils overnight. Cut beef into small cubes. Rinse, peel and dice carrots, onion and potato. Rinse celery, trim and chop. Peel garlic. Rinse parsley, shake dry, remove leaves and chop. Cut bacon into small cubes. Heat oil in a large pot with a lockable lid. Sear beef cubes in hot oil. Add carrots, celery, onion, garlic and bacon and cook briefly. Add drained lentils and continue cooking.

Reduce heat and remove broth. Season with salt, pepper, cayenne pepper and bay leaves, cover and allow to simmer approximately 45 minutes at low heat. The lentils should be soft. Season soup with pepper, vinegar, cayenne pepper and salt to desired taste. Slice sausage, add to stew and allow to heat thoroughly (about 5 minutes). Serve in bowls and garnish with parsley.
