Most children like yeast dough because it is nice and airy. It also contains particularly little fat. However, if it is kneaded with type 1050 wheat flour as shown here, it provides around twice as many minerals as yeast dough made from white flour.
For meatless yeast cakes: Simply replace the sausage pieces with a small cherry tomato or a green olive each.

- 14 ozs Pastry flour (type 1050)
- 1 pinch Dry yeast
- salt
- 3 Tbsps Canola oil
- 1 Zucchini (about 250 grams)
- 2 ozs unpeeled almonds
- 7 ozs Cream cheese (13% fat)
- ½ cup Coffee creamer (4% fat)

- 4 Turkey sausages (franks, each about 50 grams)
- 2 green Lettuce (in season; 300 grams)
- 1 yellow Bell pepper (about 200 grams)
- 3 Tomatoes (about 80 grams)
- 1 bunch Chives
- 11 ozs Yogurt (low-fat)
- 5 ozs Sour cream

Preparation steps
In a large bowl mix the flour and yeast. Gradually add 250 ml (approximately 1 cup) of lukewarm water, canola oil and 1 teaspoon of salt while stirring constantly with the dough hook of a hand mixer.
Knead the dough until it is no longer sticky, then dust dough ball with flour, cover and put in a warm place until volume has approximately doubled, about 30 minutes.
Meanwhile, rinse and finely grate the zucchini.
Finely chop the almonds in a food processor or with a large knife.
In a small bowl, stir together the cream cheese and coffee creamer until smooth. Add the zucchini and chopped almonds and season with salt and pepper.
Cut each turkey sausage into 5 equally sized pieces.
Knead the dough again, form the dough into a roll and divide into 20 portions.
Roll each portion into a ball, then flatten dough. Press a cup's rim in some flour and then press the floured rim into the center of each flattened dough ball to create an outer border.
Line 2 baking sheets with parchment paper. Place the crumpets on the baking sheets. Spread the cream cheese on each crumpet, and place 1 sausage piece in the middle of each pastry.
Bake in preheated oven at 225°C (fan 200°C, gas mark 4) (approximately 425°F/convection 400°F) on the middle rack for about 15 minutes.
Meanwhile, rinse lettuce and spin dry. Tear leaves into bite-sized pieces. Place the lettuce in a bowl.
Rinse and halve bell pepper. Remove seeds and chop bell pepper into cubes. Rinse tomato, cut out stem and dice into small cubes.
Rinse chives, shake dry and cut into rings. Place in a small bowl.
Add yogurt, sour cream, 1/2 teaspoon of pepper and 3 teaspoons salt to make a dressing. Combine the tomatoes and bell peppers with the lettuce and toss the salad with dressing to taste. Serve with the cooled crumpets.
