Ingredients

For the dough
½ cube fresh Yeast (21 grams)
350 grams Pastry flour
1 pinch salt
2 Tbsps olive oil
Pastry flour (for the work surface)
For the filling
4 onions
2 Tbsps butter
1 Tbsp thyme
1 Tbsp brown sugar
7 Apple
2 Tbsps lemon juice

Preparation steps

For the dough, dissolve yeast in 175 ml (approximately 6 ounces) lukewarm water. Mix flour with salt in a bowl, create a well in the center. Pour yeast water and oil into well and knead with hands into a dough until smooth. Knead dough on a floured work surface for about 10 minutes and incorporate a little lukewarm water or flour if needed to reach desired consistency. The dough should not stick to your hands. Cover bowl and allow to rest in a warm place for about 1 hour.

Preheat the oven to 200°C (approximately 400°F).

Peel onion, cut into fine strips and saute in a hot pan with melted butter until translucent. Sprinkle thyme and sugar over onions, cook until caramelized and remove from heat. Rinse apples, remove core and cut into thin slices. Mix apple immediately with lemon juice.

Knead dough again, roll out on a floured work surface until the size of the baking sheet. Press dough into the buttered baking sheet and form an edge. Spread onion mixture on dough, arrange apple slices over onions and place anchovies on top in a lattice pattern. Bake in preheated oven about 30-40 minutes until golden brown.

Remove and let cool slightly. Cut into pieces and serve immediately.
