¼ cup butter
¼ cup all-purpose flour
1 cup milk
4 eggs (separated)
1 cup grated Cheese (e. g. Emmentaler, Greyerzer)
Nutmeg
1 handful fresh Fresh herbs (e. g. tarragon, cress, parsley, chives, chopped)

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and brush four ramekins (approx. 250 ml each) with butter and sprinkle with breadcrumbs.

Heat the butter and the flour in a pot and stir in the milk. Simmer for around 5 minutes, stirring continuously, then remove from the heat and leave to cool slightly. Stir in the egg yolks and the cheese and season with salt, ground black pepper and nutmeg.
3.
Beat the egg whites until stiff and fold half into the cheese mixture. Fold in the remaining egg whites along with the chopped herbs and transfer the mixture to the ramekins.
4.
Bake for around 25 minutes. Serve immediately.
