Preparation steps

1.

For the scrambled eggs, crack eggs into a bowl and season with salt and pepper. Add milk and whisk.

Melt butter in a hot pan and add eggs to pan. Cook while stirring, leave on a low heat for 2-3 minutes so that it slowly cooks. Do not brown. Cook until scrambled eggs are shiny and juicy.

3.

To serve, place scrambled eggs in an egg cup and garnish as desired with cress, diced tomatoes, capers, cocktail shrimp, lemon wedges, dill, salmon caviar and chervil.
