Preparation steps

Preheat the oven to 180 ° C convection.

Peel potatoes, cut into slices and arrange in an ovenproof dish. Season with salt and pepper and drizzle with olive oil. Add wine and bake in preheated oven at 180°C (approximately 350°F) for about 15 minutes, turning over occasionally.

Rinse sea bass, pat dry and cut into 4 serving pieces. Rinse and halve tomtoes. Spread fish, tomatoes and olives over potatoes and season with salt and pepper. Bake for 10 more minutes. Baste fish with cooking juices occasionally.

4.

Sprinkle with basil and serve.
