For the pudding
800 milliliters milk
½ tsp lemon zest
50 grams sugar
80 grams Semolina flour
50 grams Poppy seeds
For the compote
2 Apple
½ organic lemon (juice)
1 Tbsp Apple juice
1 pinch cinnamon
2 Tbsps sugar
to garnish

Preparation steps

In a pot, bring milk, lemon zest and sugar to a boil. Sprinkle in semolina and poppy seeds. Cook, stirring constantly, until thickened, 5-10 minutes. Rinse timbale molds with cold water. Pour pudding into molds and refrigerate at least 3 hours.

For the compote: Rinse, peel and core apples. Cut apples into small cubes and sprinkle with lemon juice. Combine apples and apple juice in a pan and simmer until softened, about 5 minutes. Season with cinnamon and sugar.

3.

Invert puddings on plates serve with compote. Garnish with apple wedges and mint and dust with powdered sugar.
