2 Tbsps olive oil
2 Tbsps white Sesame seeds
4 ozs freshly grated Cheddar cheese

Preparation steps

For the grissini: Dissolve the yeast in a bowl with 1/2 cup of lukewarm water. In another bowl, stir the flour with the salt. Press a well into the center. Add the yeast mixture and oil to the well. Knead into a smooth dough. Cover and let rise in a warm place until doubled in bulk.

Preheat the oven to 325°F.

For the large grissini: Place half the dough on a floured surface. Roll into a sausage shape and cut into 12 equal pieces. Roll each piece into a 7 3/4" - 9 3/4" ropes. Coat in rope in the sesame seeds.

Place on a parchment-lined baking sheet and bake until crsip, about 25-30 minutes.

Remove and let cool.

For the small grissini: Place the remaining dough on a floured surface and shape into a sausage shape. Divide into 12 equal pieces. Shape each into 1/4 inch long pieces. Divide each into 8 equal pieces. Place on a parchment-lined baking sheet, sprinkle with the cheese, and bake for 10 minutes. Remove and let cool.

For serving: Fasten 8 small grissini on the end of 1 large grissini using 2 chives. If desired, serve with dip such as cheese and horseradish, red pepper, herb or tomato.
