When the berry season is over, you can also prepare the oatmeal cake with frozen berries. Alternatively, it tastes really good with diced apples or pears. If you cannot find vanilla powder, just use vanilla extract and blend it with the milk.

- 8 ozs mixed mixed berries (blueberries, raspberries, blackberries)
- 4 Tbsps ground flaxseed
- 11 ozs old fashioned Oats
- 1 tsp Baking powder
- 1 tsp Ground cinnamon
- 2 pinches salt
- ½ tsp Vanilla powder
- 16 ozs milk (whole)
- 4 Tbsps Canola oil
- 3 Tbsps Maple syrup
- 3 ozs pecan kernels
- 3 Tbsps Raw cane sugar

Preparation steps
Wash berries and pat dry. Finely grind half of the flax seeds in a blitz chopper. Then mix all the flax seeds with oatmeal, baking powder, cinnamon, 2 pinches of salt and vanilla.
In a mixing bowl, whisk together milk with 3 tablespoons oil and maple syrup. Mix in the flaxseed mix and gently fold in the berries. Brush a baking tray with remaining oil.
Pour the oatmeal mixture onto the baking tray and spread evenly. Bake in preheated oven at 180°C / 350˚F for approx. 20 minutes.
Meanwhile, chop pecans and mix with sugar. Sprinkle both over the oat cake and bake in another 20 minutes until golden brown. Cut the oat cake with pecans and berries into 12 pieces while still warm or cooled and serve.
