Nutritional values

The omega-3 fatty acids from flaxseed have been shown to lower blood lipid levels and keep blood vessels elastic - ideal for anyone with high cholesterol. Berries score with a good load of potassium. The mineral regulates the fluid balance of the cells, enables the transmission of impulses in the nervous system, makes the muscles contract and supports a steady heartbeat.

When the berry season is over, you can also prepare the oatmeal cake with frozen berries. Alternatively, it tastes really good with diced apples or pears. If you cannot find vanilla powder, just use vanilla extract and blend it with the milk.

In a mixing bowl, whisk together milk with 3 tablespoons oil and maple syrup. Mix in the flaxseed mix and gently fold in the berries. Brush a baking tray with remaining oil.

Meanwhile, chop pecans and mix with sugar. Sprinkle both over the oat cake and bake in another 20 minutes until golden brown. Cut the oat cake with pecans and berries into 12 pieces while still warm or cooled and serve.
