By using coconut blossom sugar instead of conventional refined sugars, you not only get a pleasantly caramel sweetness in the cake, but also ensure your blood sugar levels don't rise too quickly.

To prevent the crumbles and the flaked almonds from becoming too dark, another piece of baking paper can be placed on the cake during baking.

Preparation

Kitchen utensils

1 Bowl, 1 Hand mixer, 1 Baking sheet, 1 Apple corer, 1 Knife

Preparation steps

1.

Mix flour and baking powder, add cold, chopped butter and coconut blossom sugar. Cut the vanilla pod open lengthwise, scrape out the pulp and add to the flour mixture together with the eggs. Use the dough hooks of a hand mixer to make crumbles. Spread 2/3 of the crumbled dough on a baking tray covered with baking paper and press down to a firm base.

Arrange the apple slices in rows on the dough base and sprinkle the remaining crumbled dough and almond flakes over them.

3.

Bake in a preheated oven at 350°F for approx. 40 minutes.
