5 Tbsps Lime juice

16 King prawn (peeled and deveined)

3 Tbsps Pine nuts
½ bunch Basil
1 tsp Red pepper flakes

Preparation steps

Peel the orange, being careful to remove the bitter white pith. Remove the whole fruit segments, and cut into small pieces catching any juice in a bowl. Squeeze the juice from the peel into the bowl. Combine the orange juice and lime juice in a saucepan and bring to a boil. Peel the garlic, and pass through a press. Mix into the saucepan with 1 tablespoon of sugar. Simmer briefly, and add the cream. Return to a simmer over medium heat and cook for an additional 5-7 minutes. Season to taste with salt and pepper.

Cook the pasta in boiling salted water until al dente.

Rinse the shrimp, pat dry, and sear in hot oil. Season with salt and pepper, and remove from the heat. Toast the pine nuts in a dry pan until golden brown, remove, and set aside.

Rinse and dry the basil, and then cut into thin, long strips.

Drain the pasta and mix with the oranges, basil, and the sauce. Season to taste, and top with the shrimp. Garnish with chili flakes.
