- ½ Fennel bulb (about 125 grams)
- 3 sprigs Dill
- 3 eggs
- 3 Tbsps
- 4 ozs tiny shrimp (peeled)
- salt
- peppers
- 2 slices Whole Wheat Toast

Preparation steps
Trim fennel, rinse and dry. Reserve fennel fronds. Finely grate the bulb.
Rinse dill, shake dry, pluck fronds and chop.
Whisk together fennel fronds, eggs and milk in a bowl.
Fold in shrimp and season with salt and pepper.
Cook shrimp mixture in a non-stick skillet over low heat until beginning to set, then continually push eggs from edge to center.
Toast bread in a toaster.
Top toasts with grated fennel and scrambled egg mixture and serve.
