Preparation steps

Mix 4 tablespoons of oil, lemon juice and season with salt and pepper. Cut the salmon fillets into equal rectangles, drizzle with the marinade, mix and let marinate overnight.

Rinse the apricots, dry, halve and remove pits. Rinse and peel the lemongrass stalks. Pierce 4 apricot halves on one skewer and 1 salmon piece on one skewer. Place the salmon skewers on the charcoal grill or on the electric grill or 2-3 minutes on each side. Brush the apricot skewers with some oil and grill for 6-8 minutes. Add a sweet-spicy chili sauce or grated horseradish on the skewers if desired and serve.
