18 ozs Turkey cutlets
¾ oz ginger (1 piece)
2 garlic cloves
1 bunch scallions
2 ½ ozs cilantro (4 stem)
4 Tbsps Peanut oil
2 Apple
16 ozs wide Rice noodles
½ tsp Curry powder
3 Tbsps Lime juice
3 Tbsps soy sauce

Preparation steps

Rinse turkey, pat dry, and cut into 1/2 inch thin slices. Peel ginger and garlic, and chop both very finely. Clean the spring onions, wash and cut them into small rolls. Wash the cilantro and shake dry.

Heat 2 tablespoons of oil in a large frying pan and sear the meat in it for 2-3 minutes on each side over high heat. Meanwhile, wash apples, quarter, core and cut into narrow wedges. Remove meat and keep warm. Heat 1 tablespoon oil and sauté apple slices in it for 2 minutes over medium heat. Add spring onions and fry for 1 minute. Then remove everything from the pan and set aside.

Meanwhile, cook rice noodles according to package directions in plenty of boiling salted water until al dente.

Add the remaining oil to the pan. Sauté garlic and ginger in it for 2 minutes over medium heat. Add curry powder and sauté for 1 minute, deglaze with lime juice and soy sauce, season with pepper and cayenne pepper. Bring everything to the boil for 1 minute, then remove from the heat, add the meat again and toss in it.

Drain noodles, let drain briefly, and arrange on plates. Put apple slices and turkey on top and garnish with cilantro leaves.
