Ingredients

4 ozs Dark chocolate
1 tsp honey
4 ozs milk

3 ozs lukewarm milk
2 tsps fresh Yeast
1 egg
1 ½ ozs soft butter
Pastry flour (for working)

Preparation steps

For the donuts, combine the flour with the salt in a bowl. Mix the sugar with the milk and the yeast and stir into the flour mixture along with the egg and the butter. Mix all ingredients thoroughly and knead with a food processor. The dough should have a soft, smooth texture and not stick to the rim of the bowl. If necessary add a little more flour or milk. Cover and leave to rise in a warm place for about 45 minutes.

Roll out the dough to approximately 1/2 inch on a floured surface. Cut out 8-10 circles about 2 inches and cut out a ½" hole from the center of each. Cover with a kitchen towel and leave to rise for another 30 minutes.

Heat the fat in a saucepan or deep fryer to 350ºF and fry the donuts on each side until golden brown (about 1 minute). Remove and drain on a grid. Shower with sugar and cocoa while still warm.

For the sauce, chop the chocolate and place in a metal bowl with the honey. Boil the milk in a saucepan and then pour it over the chocolate. Let it melt while stirring. Serve immediately along with the donuts.
