- 6 sheets white gelatin
- 3 Tbsps elderflower syrup
- ¾ cup Buttermilk
- 7 ozs Sour cream
- 3 Tbsps powdered sugar
- ½ lemon
- 12 ozs Blueberries
- 1 ½ Tbsps cane sugar
- mint (or lemon balm, to taste)

Preparation steps
Soak the gelatin in cold water for about 5 minutes.
Mix together the elderberry syrup, buttermilk, cream quark and powdered sugar. Rinse lemon in hot water, wipe dry and finely zest the skin. Stir zest into syrup mixture.
Lift gelatin from the water and heat in a small pot until dissolved, stirring.
Remove the pan from the heat and stir 3 tablespoons of the syrup mixture into the gelatin until smooth.
Stir gelatin into the rest of the elderberry mixture until combined. Divide among 4 small ramekins and chill until set, about 3 hours.
Meanwhile, rinse the blueberries and drain well.
Toss the berries with the cane sugar and set aside.
Dip the bottom of the ramekins briefly in hot water, then run a knife around edge of each and invert onto a plate. Serve garnished with blueberries and mint or lemon balm.
