60 grams ginger
2 garlic cloves
80 grams Parmesan
100 grams Walnut
1 Lime (juiced)
100 milliliters olive oil
salt

Preparation steps

1.

Rinse snow peas, snip the ends and remove any threads. Cut pods in half diagonally. Peel ginger and cut into chunks. Peel garlic. Finely grate the Parmesan. Coarsely chop the walnuts.

Place half of the walnuts in a blender jar with the ginger, garlic and lime juice and puree. Gradually add oil until a thick pesto forms. Stir in half the Parmesan and season with salt and pepper.

Bring plenty of salted water to a boil in a pot. Add pappardelle and cook until al dente, adding snow peas during the 3 minutes. Set aside 4-5 tablespoons cooking water and drain the pappardelle and peas. Put pot back on the stove and stir the pasta water with the pesto. Add pappardelle and peas, mix well and serve sprinkled with remaining nuts and Parmesan.
