- 500 grams Salmon
- 2 Tbsps soy sauce
- 1 tsp brown sugar
- 2 Tbsps Fish sauce
- 2 Tbsps Lime juice
- 5 Tbsps sesame oil
- 350 grams Soba Noodles
- 250 grams green soybean (frozen)
- salt
- 150 grams Radish
- 3 Tbsps cornstarch
- 1 Tbsp Sesame seeds
- 2 Tbsps Garlic chive
Preparation steps
Rinse the salmon and pat dry and cut into portions. Mix in a bowl with the soy sauce, sugar, fish sauce, lime juice and 2 tablespoons oil. Cover and refrigerate about 1 hour.
Cook soba noodles according to package instructions. Rinse and drain well. Mix with 1-2 teaspoons sesame oil and arrange on plates. Cook edamame until tender in salted water, about 10 minutes. Rinse and drain. Rinse the radishes, trim, cut in half and cut into thin slices. Distribute over the soba noodles with the edamame.
Remove the salmon from the marinade, drain and turn in cornstarch. Heat sesame oil in a frying pan or wok, add salmon and cook until golden brown, 2-3 minutes. Deglaze with the marinade and a little water and leave until done. Season toaste, spread over the soba noodles and drizzle with the sauce. Serve sprinkled with sesame seeds and garlic chives.
