8 Sole fillet (about 80 grams)
150 grams Smoked salmon (cut in slices)
400 grams Spinach
200 milliliters fish stock
200 milliliters white wine
salt
white peppers (freshly ground)

Preparation steps

Rinse the sole fillet, pat dry and place on the work surface with skin side up. Place the smoked salmon slices on top.

Rinse the spinach, spin dry and cut a quarter of it into fine strips. Sprinkle the spinach strips on smoked salmon and season with pepper. Roll up the fillets and put on a steamer. Sprinkle the remaining spinach leaves around it.

In a pot, boil the fish stock with white wine. Add the boiled stock into the steamer and cover. Steam the rolls for approximately 6 minutes until steaming. Serve hot.
