4 egg yolks
½ cup sugar (scant)
2 cups milk
1 unwaxed lemon (grated zest)
½ Vanilla bean (split, seeds scraped out)
1 ¾ cups Raspberries
powdered sugar

Preparation steps

1.
Beat the egg yolks with the sugar until fluffy.
2.
Bring the milk to a boil with the lemon zest, vanilla pod and seeds. Remove the pod and pour the milk into the egg mixture, stirring continuously. Return to the pan and thicken slowly over a low heat, stirring continuously.
3.
Remove the pan from the heat and allow the custard to cool, stirring occasionally.
4.
Pour the custard into small bowls, divide the raspberries between the bowls and press into the custard. Leave to cool completely. Serve dusted with icing sugar.
