2 kilograms Pork ribs
2 onions
2 garlic cloves
2 Tbsps vegetable oil
100 milliliters Beef broth
½ Orange (juice)
4 Tbsps Ketchup
1 Tbsp spicy Mustard
2 Tbsps soy sauce
1 Tbsp Worcestershire sauce
1 Tbsp ground paprika
½ lemon (juice)
1 Tbsp freshly chopped ginger
salt
Tabasco sauce
freshly ground peppers
250 grams French fries (frozen)
salt
For garnish
Vegetable stick
Mayonnaise

Preparation steps

Rinse spare ribs, pat dry and place in a pot. Cover with boiling water. Peel and halve one onion and add to pot, along with one clove of garlic. Simmer about 30 minutes. Heat oil in another pan. Peel and finely dice remaining onion and fry in oil. Press remaining clove garlic through a garlic press into pan. Add broth and orange juice and simmer until reduced.

Transfer cooked onion, garlic and orange juice mixture to a bowl. Stir in ketchup, mustard, soy sauce, Worcestershire sauce, paprika, lemon juice, and ginger. Season with salt, Tabasco and pepper. Remove spareribs from the cooking liquid and place on a hot grill. Brush with barbecue sauce and grill until cooked through, 15-20 minutes.

While grilling, brush ribs repeatedly with barbecue sauce. Line a baking sheet with parchment paper. Place fries on sheet and bake in a preheated oven until golden-brown, 10-15 minutes. Season fries with salt. Place spareribs, fries, vegetable crudité and a bowl of mayonnaise in a basket. Serve immediately.
