½ cube Yeast
15 ozs whole spelt flour (+ 1 tablespoon to work)
salt
1 tsp whole cane sugar
7 Tbsps olive oil
4 red onions
4 Vine tomatoes
1 red chili pepper
4 green Pepperoncini (in a jar)
22 ozs strained tomato
peppers
2 tsps dried oregano
4 ¼ ozs Feta
½ bunch Basil

Preparation steps

Mix yeast with 7 ounces of lukewarm water. Mix the flour in a bowl with 1 tsp. salt and sugar, make a well in the center, pour in the yeast water with 3 tbsp. oil and work with your hands to form a smooth dough. Knead vigorously on a floured work surface, return to the bowl, and let rise, covered, in a warm place for about 1 hour.

Meanwhile, peel onions and cut into rings. Heat 3 tablespoons of oil in a frying pan. Sauté onions in it for 3-4 minutes over medium heat, then set aside. Wash tomatoes, halve and cut into wedges. Clean the chili pepper, wash and cut into rings. Drain hot peppers and cut diagonally into small pieces.

Cover 2 baking sheets (approx. 9 x 12-inch) with baking paper. Knead dough well again, divide in half and roll out on a floured work surface into a rectangle the size of a baking tray. Place 1 pizza crust on each baking sheet, pressing up a small edge, and brush with remaining olive oil.

Season the strained tomatoes with salt, pepper and oregano and spread thinly on the bases. Cover the pizzas with half of the onion rings and the tomatoes. Crumble feta on top, spread chili, pepperoni, and remaining onion rings on pizzas, and bake spelt yeast dough pizza in preheated oven at 200 °C / 425˚F for 20-25 minutes.

Wash basil, shake dry and cut leaves into strips. Remove pizza from oven, let rest 5 minutes and cut into pieces and then sprinkle with basil.
