11 ozs Wolffish (or rose fish fillet)
2 Limes (juice)
4 Tomatoes (peeled, deseeded and finely diced)
1 white onion (finely chopped)
1 Tbsp olive oil
1 tsp hot Chili sauce
¼ cup Tomato juice
½ Orange (juice)
1 bunch cilantro (leaves picked and half of these chopped)

Preparation steps

Place the fish in a glass or porcelain bowl and drizzle over the lime juice. Cover with aluminium foil and leave to marinate in the refrigerator for around 15 minutes.

Take the fish out of the bowl, pat dry and cut into chunks. Place in a separate glass bowl and add the tomatoes, onion and oil. Season with salt, ground black pepper and chilli sauce. Mix together well, pour in the tomato juice and orange juice and leave to marinate in the refrigerator for 2 to 3 hours.

Arrange the whole coriander leaves over four plates and top with the marinated fish. Drizzle over a little of the marinade and scatter over the chopped coriander.
