For the dough
300 grams Pastry flour

1 egg
4 Tbsps cold water
150 grams cold butter
For the filling
1 bunch scallions
200 grams Blue cheese (such as Roquefort)
4 small round Goat cheese
16 slices jarred pickled Pepperoncini (f)

Preparation steps

For the dough, mix flour with salt. Stir in egg and water. Cut butter into small pieces and mix in to form a smooth dough. Wrap in plastic wrap and let rest for 30 minutes in the refrigerator.

Knead dough briefly and roll out on lightly floured surface. Cut out eight 12 cm (approximately 5-inch) diameter rounds. Press dough into tart pans and trim the edges. Prick with a fork several times.

For the filling, rinse scallions, halve lengthwise and cut into 3 cm (approximately 1-inch) long pieces. Crumble the blue cheese and spread on the dough. Halve the goat cheese rounds crosswise and place each piece on the dough. Top with the scallions and pepperoni. Beat the eggs with milk and season with salt and cayenne pepper. Pour into the tart crusts. Bake in preheated oven 200°C (approximately 400°F) oven for 40 to 50 minutes.
