- 1 Cucumber
- 2 Tbsps Pine nuts
- 2 Tbsps Chili sauce
- 1 tsp cream cheese
- 7 ozs cooked Sushi rice
- 1 Mandarin orange
- 2 tsps red Caviar (lumpfish)
Preparation steps
Peel cucumber, cut off ends, cut cucumber crosswise and hollow out both pieces using a spoon or melon baller. Dry inside and outside of cucumber well with paper towel.
Toast pine nuts in a dry frying pan and let cool. Mix chili sauce with cream cheese and use to fill hollow centers of both cucumber pieces. Fill cucumber pieces with sushi rice from both sides and press firmly.
Cut each cucumber piece into 6 slices and arrange on plate. Fillet mandarin oranges. Place 1-2 mandarin fillets on each piece of cucumber sushi and garnish with pine nuts and caviar.
