1 tsp sugar
250 milliliters lukewarm Kefir
500 grams Spelt flour
1 Tbsp salt
4 Tbsps vegetable oil
6 Tbsps light Sesame seeds
150 grams grated Gruyere

Preparation steps

Dissolve the yeast with the sugar in a small bowl. Mix the flour with the salt, make a well in the center, and pour the dissolved yeast and kefir. Add the oil and 2 tablespoons sesame seeds, and knead well for 10 minutes. Cover the dough and let rise for about 30 minutes in a warm place.

Line a baking tray with baking paper.

Knead the dough again, cut into 12 equal pieces, shape into balls, and let rise covered on the baking tray for about 15 minutes more. Brush the dough with a little water, sprinkle with the remaining sesame seeds and cheese, and bake in a preheated oven at 170°C (fan: 150°C, gas mark 2) (approximately 340°F) until golden brown, about 30 minutes.
