- 8 ozs green and red, baby Spinach
- 1 large bunch, flat leaf parsley
- 1 pomegranate
- 1 Tbsp balsamic vinegar
- 2 Tbsps white wine
- salt
- freshly ground pepper
- 2 tsps Dijon mustard
- 4 Tbsps olive oil
- 4 ozs French Brie (or Camembert)
- 3 ozs fresh Parmesan
Preparation steps
1.
Rinse spinach, trim and spin dry. Rinse parsley, shake dry and pluck leaves from stems. Cut pomegranate in half and remove seeds.
2.
Mix vinegar in a bowl with white wine, mustard and olive oil and season with salt and pepper. Cut soft cheese into slices. Grate Parmesan.
3.
Mix spinach with parsley in a bowl, arrange on plates, cover with soft cheese and pomegranate seeds, sprinkle with Parmesan and drizzle with the salad dressing. Serve immediately.
