Preparation steps

Cook the pasta in boiling salted water according to the package directions. Peel and dice the onion. Rinse the tomatoes, remove the stalk, and poach for 30 seconds in boiling water. Remove from the water, and rinse under cold water. Peel the tomatoes and finely dice. Rinse the cherry tomatoes well, peel them, and set aside for garnish.

Heat the olive oil in a saucpan, and sauté the onions until soft. Add the tomatoes and simmer for 5 minutes over low temperature. Puree in a blender or with an immersion blender, bring to a boil, and add the mozzarella. Stir constantly until the mozzarella has melted. Season to taste with salt and pepper.

Place the pasta onto plates, using a ring mold to stack it. Top with 1 tablspoon of sour cream, garnish with the peeled cherry tomatoes, and the basil. Serve the pasta with the tomato sauce.
