- 1 tsp black peppercorns
- 1 tsp white peppercorns
- 1 tsp pink peppercorns
- 1 tsp Coriander
- 1 tsp chopped rosemary
- 1 tsp chopped thyme
- 4 Ribeye Steaks (each 6-7 ounces)
- 2 Tbsps vegetable oil
- salt
- thyme (for garnish)
Preparation steps

Preheat the oven to 210°F. Place the various peppercorns and coriander in a mortar and coarsely crush, or in a small chopper and lightly pulse to crush but not pulverize. Mix in the rosemary and thyme and sprinkle the mixture into a shallow dish.

Rinse the beef steaks, pat dry and rub with the seasoning mixture. In a large pan, fry the steaks in the hot oil on each side for 3-5 minutes, depending on the desired degree of doneness. Season with salt, wrap in aluminum foil and place in the preheated oven to rest for 8-10 minutes.

Remove and serve garnished with thyme.
