Ingredients

4 pcs Salmon (each about 180 grams)
100 grams Snow peas
4 Tomatoes
8 potatoes
2 Tbsps butter
For the bean puree
100 grams thick green Beans (frozen)
150 grams Whipped cream
salt
freshly ground peppers
1 tsp grainy Broth
For the tomato sauce
500 grams Tomatoes
1 shallot
1 garlic clove
2 Tbsps olive oil
2 tsps Tomato paste
1 pinch sugar
½ tsp dried thyme

Preparation steps

1.

For the tomato sauce: blanch tomatoes in hot water for a few seconds, peel and quarter, remove seeds and cut into cubes. Peel shallot and garlic, chop. Heat oil in a pan and saute shallot and garlic until translucent. Add tomatoes and tomato paste, saute briefly and season with salt, pepper, sugar and thyme. Simmer for 15 minutes on low heat.

For the bean puree: blanch beans in boiling salted water for 5 minutes. Drain and mash with cream. Strain through a sieve and season with broth, salt and pepper.

For the fish: cook potatoes in salted water for about 20 minutes, Drain.

Rinse snow peas and blanch in boiling salted water for 3-4 minutes, drain.

Season salmon with salt and pepper, place in a steamer and cook, covered, for 8-10 minutes.

Heat 1 tablespoon of butter in a pan and cook potatoes for a few minutes. Heat remaining butter in another pan and toss snow peas briefly.  

7.

Arrange salmon with bean puree, snow peas, sliced ​​tomatoes, potatoes and tomato sauce on plates and garnish with basil. Serve.
