Preparation steps

1.
Put the lemon zest into cold sterilised glass bottles or jars.
2.
Bruise the thyme a little, to release the flavour and put into the bottles.
3.
Pour in the oil to completely cover the lemon and herbs. Seal tightly and leave to infuse for a few days before using.
4.
Store in a cool, dry place and use within 1 month.
