Ingredients

For the meat
600 grams Beef (round)
2 centimeters ginger
1 garlic clove
½ red chili pepper
3 Tbsps soy sauce
2 Tbsps Oyster sauce
2 Tbsps sesame oil
1 tsp sugar
For the bread
250 grams Pastry flour
10 grams Dry yeast
1 tsp sugar
½ tsp salt
2 Tbsps sesame oil
50 grams Natural yogurt
1 tsp ground Cumin

1 scallion
minced cilantro

Preparation steps

For the meat, rinse the meat, pat dry cut into strips. Peel the ginger and garlic and chop finely. Rinse chile, cut in half lengthwise, remove the seeds and ribs and chop finely. Mix everything with the soy sauce, oyster sauce, oil and sugar and mix with the meat. Cover and leave to marinate in the refrigerator overnight.

For the bread, pour the flour into a bowl and sprinkle the dry yeast over the top. Add the sugar, salt, cumin, 1 tablespoon oil, yogurt, and about 75 ml (approximately 1/3 cup) of lukewarm water and knead to form a smooth dough. A little more or less water may be used to achieve desired dough consistency. Cover and let rise for about 30 minutes.

Preheat the oven broiler. Knead the dough again. Divide the dough into 4 equal portions, roll out into thin patties with a little thicker edge and place on a baking sheet lined with parchment paper. Brush with a little oil and place under the broiler. Cook 3-4 minutes on each side, taking care not to burn the bread.

Meanwhile, remove the meat from the marinade and stir-fry for about 5 minutes in a wok.

Rinse the scallions, trim and cut into elongated strips.

To serve, place some meat on each portion of bread and serve sprinkled with scallions and cilantro leaves.
