Product recommendation

If you are short on time, buy frozen fava beans that are already shelled.

Preparation steps

1.

Cut the meat into thin strips. Peel ginger and finely grate. Season the meat with salt and pepper and marinate (preferably overnight) in 2 tablespoons soy sauce and 2 tablespoons sesame oil. Cover the fava beans with water and soak overnight. The next day, drain the beans and cook until tender in salted water. Drain and rinse beans in fresh water. Rinse green beans, trim, and blanch in boiling salted water for about 8 minutes. Drain and plunge into cold water, then drain again. Remove the meat from the marinade and pat dry with paper towels. Peel onions, cut in half and cut into thin rings. Cook egg noodles according to package directions and drain. Rinse chile, cut in half lengthwise, remove the seeds and ribs and finely chop.

2.

Heat 2 tbsp oil in a wok and fry ginger, garlic, and onions while stirring. Add chile. Push the vegetables aside, add the meat and sear quickly. Mix in the fava beans and green beans and continue to cook. Stir in the pasta and cook to warm. Add the cilantro at the end and season with soy sauce. Serve immediately.
