- 1 lb Strawberries
- 1 Vanilla bean
- ½ cup
- 4 eggs
- 3 Tbsps powdered sugar
- 1 pinch salt

Preparation steps
Rinse and hull strawberries, drain and place 14 ounces in a tall vessel. Puree with an immersion blender.
Measure out about 1/4 of the puree and place in a bowl. Reserve the remaining puree. Cut the remaining strawberries into slices and add to the bowl. Stir to combine and let marinate in the refrigerator.
Meanwhile, halve the vanilla bean lengthwise and scrape out seeds. Bring milk and vanilla seeds to a boil in a pot. Remove from heat and set aside.
Separate eggs. Place 2 egg whites in a tall vessel (save remaining whites for another use). In a bowl, beat all of the yolks and half of the powdered sugar with a hand mixer until light and thickened.
While mixing, gradually add the hot milk to the yolks. Place the bowl over an ice bath and whip the milk mixture until it is cold.
Add the salt and remaining powdered sugar to the egg whites and beat until stiff peaks form.
Stir the reserved strawberry puree into the yolk-milk mixture to combine, then fold in the beaten egg whites.
Line a loaf pan with plastic wrap. Spread the strawberry cream in the pan and freeze for at least 5 hours.
Remove the pan about 10 minutes before serving. Invert strawberry parfait onto a plate and serve with marinated strawberries.
