Ingredients

100 grams Sushi rice
1 Tbsp Rice vinegar
1 pinch salt
1 pinch sugar
For sushi
200 grams fresh Salmon
1 Avocado
1 Tbsp lemon juice
¼ Cucumber
4 roasted Nori seaweed
2 tsps Wasabi
2 Tbsps Salmon caviar

Preparation steps

Rinse sushi rice under running water until the water runs clear.

Cook rice according to package directions on the stove or in a rice cooker. Heat 1 tablespoon of rice vinegar with a pinch of salt and a pinch of sugar until salt and sugar have dissolved. 

Place rice in a bowl. Drizzle in seasoned vinegar while folding and fanning the rice. Continue to fan rice until it is room temperature and has a nice shine.

Cut salmon into thin strips. Cut avocado cut in half lengthwise, pit, carefully remove flesh from shell and cut into strips. Sprinkle avocado with lemon juice immediately. Rinse cucumber, cut in half lengthwise, remove seeds and cut into strips. Cut nori sheets in half. Divide rice into 8 portions. Use moistened hands to press the rice into a slightly flat tube onto a piece of nori. Spread rice with a dab of wasabi paste. Top with salmon, avocado, and cucumber strips and roll up the nori sheet into a cone-shaped Temaki sushi. Garnish with salmon caviar. Serve with soy sauce and pickled ginger if desired.
