- 300 grams Pasta (Rotini)
- 1 onion
- 1 Red chili pepper
- 1 Red paprika
- 1 yellow paprika
- 100 grams Snow peas
- 150 grams Broccoli
- 10 grams fresh ginger
- 250 grams Ground beef
- 2 Tbsps vegetable oil
- 1 Tbsp Tomato paste
- 300 milliliters Beef stock
- 1 Orange (juiced)
- salt
- white peppers
- 3 Tbsps chopped cilantro
Preparation steps
Cook the pasta in boiling, salted water until al dente. Drain well.
Peel the onion and ginger, and chop finely. Rinse the chile and the peppers, and remove seeds. Chop the chile finely and cut the peppers into strips. Rinse the snowpeas and trim the ends. Rinse the broccoli florets and blanch along with the snow peas in salted water for 4-6 minutes. Rinse under cold water and drain well.
Fry the ground beef in the oil until browned, then add the onion and fry for 1 more minute. Add the tomato paste, ginger and chile, mix well, then add the beef stock. Add the peppers and the orange juice, and season with salt and pepper. Add the pasta, brocolli and snow peas, and stir in the chopped cilantro. Divide the stir fry into four bowls and serve immediately.
