5 Eggplant (about 200 grams)
1 green chili pepper
1 pc ginger (about 30 grams)
2 garlic cloves
2 Red onions
8 ozs Beef fillet
3 Tbsps vegetable oil
2 Tbsps soy sauce
5 Tbsps Oyster sauce
Szechuan pepper (or white pepper)
4 sprigs Thai basil

1 Cutting board, 1 Small knife, 1 Large knife, 1 Tablespoon, 1 Wok, 1 Slotted spatula, 1 Measuring cups

Preparation steps

Trim beans, rinse, cut in half, if desired, or cut into about 6 cm (approximately 2 1/4-inch) long pieces.

Trim eggplants, rinse and cut in half lengthwise.

Cut chile pepper in half lengthwise, remove the seeds, rinse and cut into thin strips. Peel ginger root and cut into fine strips. Peel the garlic and chop finely. Peel the onions and cut into thin strips.

Cut beef into thin strips.

Heat 1 tablespoon oil in a wok. Brown meat quickly. Remove from wok.

Heat 1 tablespoon oil in a wok, add the beans and cook until light brown while stirring, 6-7 minutes. Remove from wok.

Heat the remaining oil in wok. Cook eggplant for around 3-4 minutes while stirring and remove.

Add chile pepper, ginger, garlic and onions to the wok and cook 2 minutes while stirring.

Pour in soy sauce and oyster sauce. Add beans and eggplant to the wok and cook gently for 3-4 minutes, adding a few tablespoons of water if needed. Rinse the basil, pluck off the leaves and shake dry.

Heat the meat in the sauce and season with Szechuan pepper. Sprinkle with basil leaves and serve.
