2 eggs

2 tart Apple
2 Tbsps sunflower oil
2 stalks mint

Preparation steps

1.

Mix the flour with sugar, eggs and milk to make a smooth batter, then let the mixture rest for 20 minutes.

Meanwhile, rinse the apples, peel, core and cut into 1/2 inch thick slices.

Heat some oil in a pan. Place 1 slice of apple in the center. Ladle in some batter and spread evenly. Cook over medium heat on each side for about 2 minutes.

Remove the pancake from the pan and keep warm in a preheated oven at 150°F/125°F for convection). Repeat with the remaining dough and apple slices.
