Ingredients
- For the pancakes
- 8 ozs Pastry flour
- 1 Tbsp sugar
- 2 eggs
- 17 ozs
- 2 tart Apple
- 2 Tbsps sunflower oil
- 2 stalks mint
- For serving
- powdered sugar
Preparation steps
Mix the flour with sugar, eggs and milk to make a smooth batter, then let the mixture rest for 20 minutes.
Meanwhile, rinse the apples, peel, core and cut into 1/2 inch thick slices.
Heat some oil in a pan. Place 1 slice of apple in the center. Ladle in some batter and spread evenly. Cook over medium heat on each side for about 2 minutes.
Remove the pancake from the pan and keep warm in a preheated oven at 150°F/125°F for convection). Repeat with the remaining dough and apple slices.
Rinse the mint, shake dry and pluck the leaves from the stems.
Serve the pancakes on 4 plates, sprinkle with mint and powdered sugar as desired.
