Sweet Potato Cake

- 300 grams starchy potatoes
- 80 grams raisins
- 50 grams dried Banana
- 6 egg yolks
- 125 grams honey
- juice of Oranges
- 150 grams ground almonds
- 60 grams Buckwheat flour
- 1 tsp Baking powder
- 6 egg whites
- 150 grams dark Couverture
- 1 pkg
- Fat (for the pan)
- breadcrumbs (for the pan)
Preparation steps
Thoroughly scrub potatoes and cook in boiling salted water for 15 minutes. Rinse with cold water, drain, peel and cool.
Grate potatoes and finely chop bananas. Soak raisins in hot water. Mix honey with egg yolks and orange juice until frothy. Mix ground almonds with flour and baking power and sift into egg yolk mixture. Add grated potatoes. Beat egg whites until very stiff and fold into mixture. Drain raisins and fold into mixture with bananas. Grease a springform pan measuring 26 cm (approximately 10 inches) in diameter with fat and sprinkle with breadcrumbs. Pour in batter and smooth. Bake in a preheated oven at 180°C (approximately 350°F) for 50 minutes. Cool briefly in pan and then remove. Cool completely on a wire rack. Melt chocolate and drizzle over cake. Top with marzipan potatoes. Let chocolate dry before cutting and serving.
