Ingredients

For the soup
1 sprig Lemongrass
1 Red chili pepper
400 grams peeled Tomatoes
200 milliliters Broth
400 milliliters Coconut milk
salt
For the croutons
2 shrimp (peeled and deveined)
1 Tbsp freshly chopped cilantro
1 Tbsp freshly chopped Thai basil
1 tsp sesame oil
1 tsp soy sauce
1 slice Toast
1 Tbsp Corn oil

Preparation steps

1.

For the soup: Remove and discard outer leaves from lemongrass stalks. Rinse and pat dry stalks. Rinse chili, cut in half and remove stem, seeds and ribs. Dice flesh.

In a saucepan, boil tomatoes with lemongrass stalks, chiles, broth and coconut milk. Simmer for 15 about minutes and season with salt to taste. Rinse shrimp, pat dry and chop. Mix shrimp with herbs and season with sesame oil and soy sauce.

Heat oil in hot pan, cook shrimp mixture. Remove from pan. Cube bread and fry in remaining oil until golden brown, about 2 minutes. Mix cooked shrimp with toasted bread. Remove and discard lemongrass stalks from soup and puree. 

4.

Season soup with salt and pepper. Ladle soup into a small bowl. Garnish with shrimp and bread and serve immediately.
