- 500 grams Tofu
- 2 Tbsps soybean oil
- 1 carrot
- 1 onion
- 2 garlic cloves
- 2 Tbsps Tomato paste
- 100 milliliters Red wine (vegan)
- 200 milliliters vegetable stock
- 400 grams strained Tomatoes
- salt
- 1 tsp sweet ground paprika
- freshly ground peppers
- ground cilantro
- 1 tsp Agave syrup
Preparation steps

Crumble the tofu with a fork. Heat the oil in a pan, and sear the tofu for 5 minutes. Peel and coarsely grate the carrots. Peel and finely dice the onion and garlic. Mix the onion, carrot, and garlic into the tofu and cook for 2-3 minutes. Add the tomato paste, sauté briefly, then deglaze with the red wine and the stock. Mix in the paprika, and season to taste with salt, pepper, and coriander. Simmer for 15 minutes until thickened. Sweeten to taste with the agave syrup. Adjust the seasoning, if necessary, before serving.
